Edge Steakhouse is a promise fulfilled. First appearing in the Westgate in Utah, the Edge Steakhouse in Las Vegas finally threw open its doors in 2015 and invited guests in for a taste of unabashed classic Vegas glamour. There’s a wood-panelled bar and lounge, a colonnaded central dining room, private dining areas and a Vegas heyday vibe so strong that you feel like a member of the Rat Pack might materialise at any moment.
Steak will be the focus of any sane, meat-loving diner here, with Harris Ranch, Snake River Farms Prime Kobe and Miyachiku’s award-winning Miyazaki Wagyu on offer in every form from a 7oz petit filet mignon to a 14 oz New York cut. But even the most dedicated steak-fanatic may well be swayed by the other dishes on the menu.
Diners can indulge in soaring towers of seafood on ice, Caesar salads prepared tableside, and rich, sticky braised buffalo short ribs. And truffle abounds in the menu, appearing in everything from the mac and cheese and the fries to the lobster risotto. The Edge Steakhouse knows how to do decadence. Hell, you can even get a Maine lobster tail on the side of your epic slab of Wagyu beef; this is not your average surf and turf. This is old school American dining 2.0.
And a word on the drinks menu: it’s vast. Both Old and New World wines appear in all their regional splendour, as well as Champagnes, international and domestic beers, and cocktails. By the end of the night sampling the delights of this menu, you won’t just be imagining the ghosts of the Rat Pack, you’ll be crooning along with them as well.
