As anyone who’s ever dined on Taylor Swift’s tour bus knows, chef Dan Krohmer really knows his stuff. Former touring chef for Ms Swift, Jay Z and others, not to mention Morimoto alumnus, Dan Krohmer opened this American-style raw bar in Vegas’ Westside in 2015. Other Mama was a labour of love for Krohmer, and it shows. He even did all the carpentry in the petite restaurant – a chic dining and kitchen space decorated largely in shades of blue and red.
Wielding his Japanese culinary training, the Asian influences on Krohmer’s modern American menu are in abundance, from the wasabi cocktail sauce for the oysters to the miso hollandaise served with the prime ribeye. And while the raw bar with sustainably sourced ceviche and sashimi is a great draw for many of Vegas’ top foodie-types, there are plenty of perfectly-cooked options on the menu, too, including crispy-skinned organic chicken with shishito peppers.
There’s a decent menu of US and international wines and beers on hand here, but the ideal libations for Krohmer’s accomplished menu are the cocktails named after intoxicating ladies. Guests can treat themselves to a spicy Trixie (Jameson whiskey with canton ginger, lemon and cayenne) or a sparkling Agatha (made with Napa Valley’s Domaine Chandon, Pama liqueur, Aperol and pomegranate); Beryl, with her apricot bourbon and Creole bitters, is a particular crowd pleaser.
