Hg2 : The Hedonist

Le Severo

Run by former butcher William Bernet, Le Severo is widely perceived to be the best steakhouse in Paris. The steaks here are aged from five to ten weeks and expertly cooked, the French fries are hand-cut and double fried and there is a huge (and brilliant) wine list that takes up a whole wall of blackboard in the cosy restaurant. Sure, it’s simple, but when the meat is this good, it doesn’t need to be anything else. As you might expect from a chef who used to be a butcher, you shouldn’t expect too many vegetables on the menu, and, to be honest, this is right on the mark. This restaurant is unashamedly carnivorous. Le Severo is slightly off the beaten track but definitely worth a trip down to the 13th arrondissment, however be sure to make a reservation as, since the New York Times named this one of the best restaurants in Paris for steak frites, it’ll almost always be booked up in the evenings. One final word of advice – don’t even think about asking for your steak cooked any more than medium rare. This meat is best at or below this stage in the cooking process – ask for it well done and your waiter will most likely “forget” you ordered in the first place…
