When it comes to drinking in Sydney, Blu Bar has one of the best views to gaze at as you sip something fabulous. However, the view is useless unless you bag a good perch – while there are floor-to-ceiling windows, there are only a few window-facing barstools and high tables. Don’t come here expecting Saturday night atmosphere – Blu Bar is hotel bar and it feels like one, which isn’t necessarily a shortcoming. With a requisite sophisticated door host and sultry lounge music, it has a classy ambience and the bar is manned by fine mixologists, who can craft a sublime array of (expensive) cocktails from your standard martini right up to a $10,000 ‘Martini On The Rock’, served with a diamond. For the less moneyed, slurp down a Wibble, a tangy mix of Plymouth Gin, Plymouth Sloe Gin, grapefruit and lemon juice, with a blackberry liqueur finish – it doesn’t need a sparkler to impress. Come here for a pre-dinner cocktail in time for the sunset – it will blow your socks off.
