Carnevino
Soaring ceilings, a sumptuous color palette of rust, cream, and dark brown, and rich materials such as leather, marble and walnut set the stage for another of Joe Bastianich and Mario Batali’s restaurants in Vegas: Carnevino. Here, you’ll still find signature pasta dishes (such as cannelloni with duck and Amarone) and even some seafood offerings, but the real emphasis-as the name implies-is on meat, specifically hormone and antibiotic-free beef, rubbed with sea salt, black pepper and fresh rosemary. Older men with big bellies and a propensity for Barolos rub elbows with a younger set looking to avoid the carbs while still getting their Batali fix.
