Nobu
Nobu, named after its creator, chef Nobu Matsuhisa, is on the tip of sushi lovers’ tongues when asked about the best sushi in town. Decorated like Nobu in New York with minimalist Zen-like detail, the 214-seat Vegas restaurant is filled with hipsters and business associates, both of whom dress in smart-casual attire. There are also 16 seats at the sushi bar for when you’ve forgotten reservations and still need a Nobu fix. The Omakaze (chef’s menu) is legendary. At the very least, do not finish your meal without ordering the yellowtail sashimi with jalapeños. Iron Chef Masaharu Morimoto gets co-credit for the mastery of this restaurant and is a champion sushi chef in his own right.
