City of London Distillery
Founded by Jamie Baxter in 2012, City of London Distillery is bringing gin back to the capital in a big way. The petite distillery, whose basement setting is located in an alley off Fleet Street, is the first City of London distillery to open in over 200 years.
Punters can peep into the distilling room – a tiny set-up consisting of two stills, housed behind a pane of glass – while they make themselves comfortable at COLD’s stylish and warmly lit bar. The bar stocks upwards of 170 gins and 10 tonic waters for almost endless G&T combinations, and its drinks menu comprises a series of craft cocktails that show off the spirit in a number of iterations. Of course, the distillery’s own gin is a highlight: heavy on the grapefruit, it’s a clean, zesty, and fruit-forward gin.
COLD’s gin shines particularly brightly in the London Negroni cocktail, which combines the spirit with vermouth made by London-based distiller Sacred and Kamm & Sons ginseng liqueur, another London producer. Locavores, this one’s for you.
