Skye Gyngell returns to London after her barnstorming success at Petersham Nurseries to create a totally different animal. Her new London restaurant is Spring, housed in one of the wings of Somerset House and is a homage to nature and all things natural. The restaurant space benefits from large windows that illuminate the room and the décor is Spartan in its opulence, putting the attention firmly on the food. The menu is very much focused on the quality of the produce, which takes centre stage, but applied against a range of different cuisines and cooking styles. Prices are high and are more reflective of the location than the quality of the cooking, but Spring is a welcome addition to this little sliver of London that has been lacking something of real quality for quite some time.
