Thanks to curing, aging, temperature-control, expertise and vision, each dish that comes to your table is served exactly how Chef Hiro wants it to taste. And it’s sure to be a taste sensation; this pure expression of sushi is not often found – at least not at this level of mastery – outside Tokyo. Here, the fresh perfection of the fish is a much a focus for the kitchen as the rice. It’s the whole package.
Settling into the wood-panelled space, you might be sent marinated fluke or snapper brushed with the merest hint of house-made soy. Fresh Japanese sardine or fatty tuna. The list goes on, with dish after dish of superlative sushi and nigiri appearing as if by magic. There’s also a thoughtfully put together lists of sakes and beers to enjoy alongside. But if you want to up the ante on what’s already a memorable meal, just give the kitchen 48 hours notice to source the requisite high-end ingredients and you can opt for the premium Botam menu. Your wallet will take the brunt, but you won’t regret a single mouthful.
