You really only need one thing to qualify as one of Milan’s best restaurants. The single most important aspect of Aimo e Nadia is not, apparently, the Michelin-starred cooking (by Tuscan husband and wife Aimo and Nadia Moroni), not the location (a quiet western suburb), not the crowd (people wouldn’t travel out here to see and be seen), but the raw ingredients. rnrnSo important are they that Aimo and his grown-up daughter, Stefania, patrol the restaurant explaining the food’s provenance: nothing is factory-farmed, much is wild-crafted, all is obsessively and seasonally selected from source. rnrnThe innovative cooking process focuses on each revered ingredient to preserve its freshness, taste and texture – the very essence of Italian cooking. Certainly there is a serious, contemplative air in this formal yet modern environment as diners savour the moment. rnrnService, complete with food served beneath ‘ta-daa’ silver domes (that here suggest pride not pomp) and two sommeliers, is as you’d expect of a Michelin-starred restaurant
