Hg2 : The Hedonist

Bouley

This sumptuous, pull-out-all-the-stops eatery, with its lusciously soft and cushy dinner chairs, grandly set white-clothed tables, and be-suited wait staff, is a special-occasion destination if there ever were one – which is, of course, why chef Cesare Casella happily tips his toque at the TriBeCa spot.

But this is David Bouley – he of the James Beard award and four-star reviews; he of the early TriBeCa pioneers who, along with Drew Nieporent and Keith McNally, transformed a no-man’s land into a dining destination.

But while the rest of the eating and imbibing world seems to careen toward casual, Bouley keeps things spiffy – and you know, thank goodness. From the perfect sweet, salty, savory combination of chilled Maine lobster, Serrano ham, mango, and artichokes to the local, organic farm-raised pork gently swathed in an onion-ginger sauce with crispy, homemade fettucine, Bouley continues to deliciously raise the bar.
