The classic, starched white tablecloths, subdued lighting and army of uniformed waiters at Shaun Hergatt’s restaurant inside the petite Hotel Chandler is everything one might expect from a Michelin star establishment. But despite appearances, Juni’s menu is anything but traditional. Perhaps best saved for special occasions, it’s worth splashing out on one of the tasting menus here to really get the full force of culinary theatrics. Starters at Juni are preceded by a selection of mouth-watering amuse bouche, from subtle carrot tortellini to shiny red “pebbles” bursting with fruit. An array of playful, beautifully presented appetisers set the scene for the increasingly intricate dishes that follow, a few standouts being the signature foie gras cherry – a perfectly polished red cherry gel containing soft foie gras mousse, served on a bed of pistachio soil – and the delicate shaved hearts of palm, served with an almond mousse and an orange reduction, arranged on the plate like a work of contemporary art. We’d recommend opting for the wine parings, which are expertly selected to complement the complex flavours of each dish.
