Sur Mesure Par Thierry Marx
In a country where the pursuit of top chefs is a national sport, Thierry Marx is one of the most sought-after in the game. Just last year, Sur Mesure, one of his lush eateries located in the Mandarin Oriental, was awarded two Michelin stars (he’s been awarded two stars at previous restaurants). The accolades are no surprise. Situated in a modernist white dining room with futuristic wave-shaped walls courtesy of Patrick Jouin, the restaurant turns out delicate, light-handed, and artfully arranged plates. Menu descriptions veer towards the Spartan (“structured & destructured asparagus,” “egg yolk/minty green peas/tomatoes foccacia”), and let the plates surprise diners. Expect potent flavours, achingly fresh ingredients, and architectural plating. This may not be revolutionary French cuisine, but Sur Mesure is near-perfect in its execution.
