Sansho

Sansho, one of a handful of Asian fusion restaurants in Prague, is the brainchild of acclaimed former-Nobu chef, Paul Day.  

Sansho’s no-fuss interior of long, blond wooden tables and benches is simple and stylish in its provisions but totally secondary when it comes to the food. And even that’s selective – only one tasting menu is available for dinner (à la carte options are offered at lunch).  With groups of diners made to share from one big central plate.  

It’s a tough track to take, but Day seems to have his services locked down.  

Fresh fruits, herbs and spices – shipped from Hanoi to Prague’s large Vietnamese population – are key. As well as carefully selected cuts.  

Day might well be bringing a new style of dining to Prague, but his own background stands strong. Educated as a butcher in London’s Chinatown, Day still butchers his own offerings and is set to launch his own butchers shop too.  

Sansho offers excellent food without the pretentiousness – Day is even on hand to exchange comments.
