It’s safe to say nearly every Sydneysider has had breakfast at Bills – it is one of the most popular cafés in Sydney – and the people who haven’t have at the very least heard of blonde celebrity chef Bill Granger, who is affectionately dubbed Mr. Scrambled Eggs. His cafés do lunch, but breakfast is where it’s at. Highlights include the famed eggs, along with ricotta hotcakes smeared with fresh banana slices and honeycomb butter, and sweet corn fritters with roasted tomato, spinach and bacon. Those fruit salad aficionados won’t find their bowl dominated by a massive amount of chopped apple, either. In Bill’s mix, there’s papaya, pineapple, melons, blood oranges and mandarins, served with a dollop of yoghurt and honey. It can get hectic in the morning, with gay couples, mums and prams and solo diners with their noses buried in newspapers.
