For their latest venture, acclaimed pair (chef) Brent Savage and (sommelier) Nick Hildebrandt have set up shop in Potts Point. A far more casual, but no less finessed, affair than their award-winning Bentley Restaurant + Bar, Monopole combines the gastronomic creativity that Savage is well known for with Hildebrandt’s talent for all things grape. Glorious mains like the sardine ceviche with eggplant and fabulous desserts like the rhubarb sorbet with gingerbread and ginger curd are further improved by Hildebrandt’s masterful knowledge of wine pairings a global wine cellar of over 500 bottles. The pretty plates are served up in the relaxed dining space, which fits right in with the laid-back bohemian vibe of the Potts Point neighbourhood.
