Summit

Summit is one of restaurants in Sydney you won’t want to miss – the view from the 47th-floor of the iconic Harry Seidler-designed tower is eye-popping – and the elevator ride is ear-popping. Summit is probably best avoided altogether if you suffer from any form of vertigo or motion sickness though and that’s not just because of the leg-wobbling views. It’s also a revolving restaurant that turns ever so gently on its axis, treating diners to magnificent 360-degree view over the city. Seating 250, Summit is a glamorous old dame on the Sydney scene – it’s been around for nearly 40 years. It’s a bedazzling view, but you will tear your eyes away to feast on epic cuisine. Chef Michael Moore is a celebrity chef but also the owner of Summit. His famous dishes include cold, smoked ocean trout, served in a medley of poached quail eggs, butter brioche sippets and organic seeded lavosh. It’s gently warmed by a bowl of hot water, fennel, lemon and parsley beneath (just don’t drink it). The twice-cooked pork belly is Moore’s pièce de résistance, a perfectly-shaped portion of meat with just the right amount of succulent fat, covered with an identically-shaped slab of glass crackling.
