One of the most successful restaurants in Sydney, Sushi-e has fantastic food and a location most other restaurants would envy – sitting on the same level as Hemmesphere, one of the city’s sexiest cocktail bars. Set on the upper-level of the Establishment building, you need to walk through its Moorish opulence to reach Sushi-e, and simply wander back after your meal for a nightcap (it would be rude not to). Slicing seafood with agile fingers and skilled mastery, chef Nobuyuki Ura and his team work their magic behind a central counter – there are only around 25 seats at the counter so make sure to call ahead so you can ogle while they create edible art. All the standard classics are present and correct, like freshest-of-fresh kingfish slices lightly fused with citrus-imbued soy sauce (ponzu) and the complete selection of nigiri sushi. If you’re more than peckish, larger dishes like 500-day grain-fed Wagyu beef or miso-swathed cod are there, too. The crowd favourite? The selection of eight porcelain tasting spoons – perfect if you’re dining al deux with two servings each; morsels of sublime Japanese appetisers.
