In early 2010, the Bentley had a Cinderella moment; Pascale Gomes-McNabb transformed the corner Crown Street pub into one of the most stylish, slick Sydney restaurants. Now, The Bentley has undergone a new makeover, transitioning to a cosy location in the Radisson Blu Hotel in Sydney’s CBD. For diners, Chef Brent Savage’s revamped menu is raved about in culinary circles – the eight-course dining menu offers contemporary cuisine with imaginative flair, such as kangaroo with purple carrot, riberry sauce, and native pepper, southern calamari with carrots, squid ink, and samphire, and, beguilingly, aerated chocolate with fig leaf ice cream. It’s all top-notch nosh, and with one of Sydney’s most superb wine lists, this is chic Aussie dining at its best.
