Celebrated Irish chef Brian McKenna, who worked under Gordon Ramsay and is known for his molecular gastronomy, launched the flagship Blu Lobster in time for the Olympics. The restaurant is designed to invoke the feeling of the ocean with sea-blue upholstery and thousands of blue and crystal teardrops dangling from the lofty ceiling. We recommend splurging for either the six or 10-course tasting menus (RMB 700 and RMB 950, respectively) which incorporate the majority of the à la carte dishes because if you’re going to do the Blu Lobster, you might as well go all the way. Savor the unusual lobster bisque with caviar, coconut and curry to start before moving on to the Asian spiced crab risotto. The dark chocolate and coriander tart seasoned with olive oil and salt is out of this world. The pièce de résistance, however, is the rare, tender meat of the blue lobster of which there is only one in every million.
