The words ‘seasonal’ and ‘local’ have become (thankfully) as ubiquitous on menus in the early 21st century as the unfortunate words ‘Chilean sea bass’ were in the 80s and 90s – and thank goodness, we say.

No one has been as vocal or staunch a champion of sourcing local ingredients – from meat to cheese to produce – as locavore chef Dan Barber (see Blue Hill at Stone Barns). His desire to connect the diner with the source of their supper spurred him to use his own family’s farm in the Berkshires as well as start his own farm in the Hudson Valley, from which he sources as much of his seasonally, daily changing menu as possible – and has earned him the great respect of his apron-wearing brethren.

Something between quiet neighborhood haunt and special-occasion spot, the comfortable elegance of Barber’s sub-level West Village dining room is as charming and pleasantly civilized as the food is direct and honest.
