Mention that you’re having dinner at Carson Kitchen to a Las Vegas local and they’re bound to sigh happily as they recount memories of the Bourbon Fudge Brownie with its sweet, sticky brown butter bacon ice cream. Or the “Better Burger”, which they’ll assure you lives up to its name, with its oozy boursin topping. But there are many other sigh-worthy dishes on Chef Simon Kerry’s menu at Carson Kitchen.
The late celebrity chef’s menu here is rich with his unique spin on comfort food classics. Kerry’s salty, savoury devilled eggs, topped with pancetta and caviar, are a case in point. As are the crispy chicken skins, served with smoked honey, and his secret-ingredient enhanced mac and cheese. But for all its glutton-celebrating glory, the menu serves a respectable “Farm & Garden” section, with all the green goodies you’d expect, served in decadent ways (asparagus and green goddess dressing, with a hunk of beef fat crouton, anyone?).
In fact, at Carson Kitchen there are more noteworthy dishes than you’ll have room for, which is why many are intended to be shared. This means that there’s no excuse not to try to the Tempura Green Beans or the Bacon Jam, with baguette and baked brie. Or the Veal Meatballs, pimped with a sherry foie gras cream. If there was any incentive for an all-out night with friends, it’s the food here; more friends mean more chances to try, if only a mouthful of, the Hot Oysters or the Glazed Donut Bread Pudding (served with a three rum caramel and sumptuous vanilla creme anglaise).
