Cochon Butcher

First thing you should know about Cochon Butcher in New Orleans is that the folks here claim to love bacon more than you do. Now, whether or not this is the case (it probably is – you can’t source and serve bacon like this without a whole lot of love), you shouldn’t see it as a challenge. There’s an awful lot of delicious bacon and other superlative meat-stuffs on the menu here; you have to pace yourself. There’s the bacon melt sandwich with collard greens, the epic BLT, and even sweet bacon pralines. In fact, casting your eye down the menu, there’s everything from “Carolina-style” BBQ pork and a whole suckling pig to Moroccan-spiced lamb, and a mouthwatering selection of small plates and sides, including mac and cheese, potato salad and slaw. It’s everything the discerning carnivore could ever want.

But what would you expect from an artisanal butcher, sandwich shop and wine bar? Here, they cure their own meats and make their own sausages, crackers, pickles and more. And you can taste and tell the difference; Cochon Butcher really knows its stuff. The house-cured meats are a case in point. Whether you dive mouth-first into one of the charcuterie boards, or sample your way from duck pastrami through to salami, boudin, andouille and the terrines on multiple visits, there’s plenty to enjoy. The Cochon Muffaletta – that iconic meat and pickle New Orleans sandwich – is a great place to start.

Don’t forget to give due attention to the drinks list at Cochon Butcher, even if the meat on offer is an attention-stealer. Wines, both local and international, come served by the bottle and the glass, and there’s a great selection of draft beers and creative cocktails as well. Rosa’s Cantina, a compelling mix of mezcal, tequila, cucumber lavender bitters, cucumber cordial, jalapeño and lemon, is a particular hit. Just settle into the trendy space (all exposed brick and pipes) and let the parade of delicious dishes and drinks commence.
