Thirty-something rising culinary star Dario Barrio Dominguez has made Dassa Bassa one of the most fashionable restaurants in Madrid by concocting a highly creative Mediterranean menu blending unusual textures with opposing colours and flavours.

Experimental dishes at Dassa Bassa¬†are not for everyone’s palette such as an avocado ceviche or bacon-infused veal with sauerkraut. Adventurous foodies should try the de-boned oxtail crepinette marinated in red wine and chocolate served with runner beans. An ample dessert menu offers crushed apple with yoghurt sorbet, but be prepared for a shock to the senses when you sample the green tea and lemon foam with Martini jelly cocktail dessert, which literally explodes in your mouth.

The intimate and stylish cream white seating within a whitewashed-brick vaulted basement has become the place to be seen for aspiring models, actors and wannabe jet-setters.
