De Kas
In the far east of the city used to be a deserted old greenhouse. The glass was broken, the heating removed, and only weeds grew. Then Michelin-starred chef Gert Jan Hageman turned the old ruin into one of the most revered restaurants in the country. Ever since opening in 2001, de Kas (meaning the greenhouse) has flourished. The actual greenhouse is still there, so you can sit beneath the stars even on the coldest night, in a warm, modern interior. There is no choice on the menu, you just eat what was harvested that day from the surrounding farms of Amsterdam and the garden behind the restaurant. Dinner comes as three small starters, a main dish and a dessert. Eating at Kas is a culinary adventure without a map, and one that turns up long-forgotten vegetable dishes like super-fresh dinosaur kale (a type of cabbage), sunchokes (a kind of artichoke) and black salsify. The dishes all come with small portions of meat and fish, which might scare off the veggies.
