Beijing restaurateur extraordinaire Alan Wong has hit pay dirt with his Californian-styled Japanese restaurant Hatsune. Locals and laowài alike can’t get enough of the best sushi rolls in town, especially the 119 Roll (tuna with tangy sauce). Located inside The Village, the walls are covered with cheerful kimono prints and the aquatic theme is evident in the shoal of fish sculpture hanging from the ceiling. There is a long, central bar decked out with taiko drums that the bartenders hit whenever sake is served (which can be quite often on Friday and Saturday nights). You will be served the daily amuse bouche as you look over your menu and we recommend a combination of dragon rolls (soft-shelled crab inside and slices of tuna and salmon outside), sashimi and nori shrimp tempura. Hatsune also boasts two sushi bars and a sunken private room for 12 people sitting Japanese-style around a low wooden table. Its small balcony is perfect for dining en plein air with chilled sake during the summertime.
