La Biferia

With chalkboard diagrams of cows hung along their walls, Biferia is not one of the usual restaurants in Bogota. But the message is clear: this place knows its beef. Biferia promotes Colombian beef and traces the cows’ lives from the day they’re born; Biferia cows are never frozen, so you can tell your fillet is really fresh with every mouthful. Together with the chalkboards, there are pop art cow photos and cow-hide bar stools to afford the place a kitch vibe, though the touches are light and the general ambience is simple and warm. The leather booths are home to groups of young friends and families, and the occasional business lunch. A Biferia speciality is beef intestines-soft inside but chewy on the outside, and a similar flavour to steak-they’re a delicacy worth trying. The portions are good, and you’ll leave feeling satisfied, especially with Biferia’s privately cultivated coffee as the perfect finishing touch.
