La Chabotté Bistro
If you are planning on eating in Courchevel, top of your list should be here at Hotel Chabichou. There aren’t many Michelin-starred chefs who will let you eat in their kitchen, but Michel Rochedy will if you book first. Not much to ask, is it? The Chabichou – an imposing white-fronted, four-star hotel in the centre of 1850 – is easy to find as nowhere in town looks remotely like it.
Diners are issued with slippers on arrival and handed warmed-up shoes when they leave. Menu items such as saddle of rabbit, raw beef marinated in caviar or pigeon breast with giblets in filo pastry parcel are an uncommon treat for the adventurous. Those on a budget will find the that the lunch menu is generally less expensive than dinner. But whether it’s noon or night, just eat there. You’d be a fool not to.
