Each course is so beautifully presented and so remarkably flawless in texture, taste and appearance that out of all the restaurants in Sydney, Marque deservedly took home the ‘Best Restaurant’ title in the Sydney Good Food awards. From delicate almond jelly with chunks of blue swimmer crab, spatchcock with shallots, leek, white asparagus and ox heart, or a magnificent chocolate mousse ‘écrasé’, with eucalyptus and coconut, take a seat in the smart black-lacquered, dark-wood and white-clothed dining room and expect the best in food, service and wine, without the pomp plaguing other restaurants of this calibre. Be sure to choose the degustation with matching wines from sommeliers Nicolas André and Zoltan Magyar, who swan around advising diners on what to pair with what. Whether it’s a risotto of South Australian calamari and prawn or a warm chocolate ganache with praline, lemongrass and rosemary, they’re always on the money.
