Bosses and bigwigs from the city’s corporate world fill Matiz, one of the more understated restaurants in Bogota, with their suits and voracious appetites. Head chef Diego Vega, who is Peruvian but trained in Italy, combines several cultures and techniques to create superb dishes such as quinoa risotto with shrimp and a light coconut sauce and an oyster chowder with crunchy seabass strips and a mixture of mushrooms. The food is perfectly balanced, and well complimented by a good selection of wines-Matiz is widely regarded as having the best sommelier in Bogotá. The kitchen is open, so guests can see how seriously the chefs take their works of art, and a water feature towards the back of the restaurant creates a zen vibe. Matiz’s quietly formal atmosphere isn’t too appropriate for children, but it’s perfect for a sophisticated night out.
