The one that started it all for this double-shot James Beard award-winning chef. David Chang may not have known he would hit pay dirt with his slim, simple, no-reservations eatery, but New Yorkers fell head over heels for this ramen-rich spot, always a favorite for Jean George pastry chef Johnny Iuzzini for late-night eats (“Any of the Momofukos, or a ramen joint..!”) and the Strip House’s John Schenk. As broad as it may sound, to call it southeast Asian is too limiting, because Chang’s influence spans from traditional French to good ol’ American barbecue and beyond. Bill Buford may have our very favorite comment in this entire book on the topic of Chang’s original: “Momofuku. Just for the name. It sounds like a poem or something illegal. Or both: Let us go then, you and I, when the evening is spread out against the sky, let us go and MOMOFUKU!”
