Ortanique, unlike many of the restaurants in Miami, came into being via a rather original route but having studied television chefs for many years, and picked up tips from a friend’s restaurateur father, Cindy Hutson moved to Miami and set out on the ocean, acting as skippere on a 36-foot fishing boat and testing out her culinary ideas on the fish that were caught for the passengers and crew. Eventually she brought her seafaring knowledge back to dry land to start a South Beach restaurant before opening Ortanique in the Coral Gables restaurant arena. Ortanique specialises in ‘Cuisine of the Sun’, an invented concept cobbled from South America, Asia, North America and the Caribbean. Jamaican spices and techniques figure prominently, since the country was the homeland of Hutson’s first husband and the base for her first business venture, a coffee and seasonings exporting company. The restaurant’s name relates to a Caribbean strain of oranges, and indeed, the curtains, doors, plates, menus, pillars and tables at the restaurant are all decorated with orange motifs. It’s pretty, if a bit much, but in any case Ortanique serves some excellent signature dishes (mussels in spicy Jamaican Red-Stripe beer broth, West Indian-style bouillabaisse). Chefs in the area always recommend this restaurant and it is regularly packed, so booking is advisable.
