The décor at Pajares Salinas is simple and elegant but the primary focus is undoubtedly on the menu – it is one of the best Spanish restaurants in Bogota. Only the very best produce is used, and ingredients are often flown in from Spain to create a meal that will supersede even the highest expectations. The dishes of the day depend on the freshest foods in the kitchen, and while simple dishes such as roast lamb and steak tartare will be amongst the best you’ve ever eaten, there are also more adventurous options, such as the tripe and kidneys in sherry. The atmosphere here is not pretentious, either, though it is fairly formal and most of the guests tend to be over 30. It’s worthwhile ordering good wine to complement the dishes, and while the bill will certainly add up, the quality of the food makes the cost more than reasonable.
