PNY Marais

Parisians have taken to burgers with relish in recent years. Burger joints are popping up from one arrondissement to the next. But PNY remains one of the most popular, with an outpost in Oberkampf and another occupying a prime spot on the rue du Faubourg Saint-Denis.

The design brief for PNY Marais was to edge towards the 50s; the classic American diner, but with more of a feminine twist. And much like the other PNY locations they designed, Paris-based studio Cut Architectures more than delivered. The result is a chic, candy-coloured space, which, for all its confectionary-esque spirit features exposed stone walls, geometric patterns and plenty of metal mesh.

But don’t let the whimsical decor fool you. PNY Marais take their meat very seriously. Sourced from artisanal producer, Le Ponclet, and matured for weeks, the beef burgers they create – with beef minced just before cooking – are amazing. The Vintage Cheeseburger is as good a place to start as any – it’s proof positive they can perfect the classic (we’re talking ketchup, mustard, American cheese and pickles) – before moving on to “The Return of the Cowboy”. This masterful meaty creation sees nine-month old cheddar, smoked streaky bacon, onion jam, fried onion rings and house-made BBQ sauce collide in a series of majestic mouthfuls.

Not content to simply offer superlative beef burgers, PNY Marais offers a chicken burger (crispily coated with panko breadcrumbs), a vegetarian option (an “Atomic” Portobello mushroom with plenty of PNY trimmings) and even a wild cod burger, fantastically named “The Fisherman and the Siren”, which comes with spinach shoots, caper sauce and chervil. You can opt for fries or salad on the side, and there’s a petit dessert menu, should you manage to have room. Or simply have your sweet alongside your savoury in the form of a cold, creamy milkshake. There’s also a selection of beers, ciders, and wine though, should your tastes run more along those lines.
