Red Medicine is anything but your average Vietnamese eatery. Chef Gordon Khan and managers Noah Ellis and Adam Fleischman have worked hard to create their own homage to the flavours of Vietnamese food, whilst avoiding some of the better-known stereotypes. Just on the edge of LA’s starlit Beverly Hills, Red Medicine stands out as a chic fusion of French-inspired West Coast seafood – all modernist flair, fragrant spices and mouth-watering cuisine. The emblazoned reds and blackened wood interiors suggest a punked-up Vietnamese joint with attitude but the extensive selection of craft cocktails (similarly entwined in the orient, with shiso, ginger and even black tea) elevate Red Machine to new levels of allure. Boldly taking traditional Vietnamese flavours and introducing them into West Coast format, Khan’s culinary artistry has got the LA shakers well and truly hooked – the birch ice dessert is a particular local favourite.
