Chef Thierry Mathiault dashes to the Alps from St Tropez during the winter to offer gourmet cooking at the four-star Hotel Carlina, which houses Restaurant Carlina, one of the best restaurants in Courchevel.

The menu – inspired by ‘la plage’ – changes daily, but typical choices include scampi served on penne, tenderloin of beef and pan-fried salmon sole served with prawns. The prix fixe dinner menu is €80, while the lunchtime buffet – served on the terrace facing the piste – is arguably the best in town.
