The focus at Skool in Potrero Hill is not on joining the reams of hip San Francisco restaurants but serving sustainable seafood, prepared with largely Japanese twists. The backers have lots of sushi bars under their belts-and one chef hails from the excellent Bushi-Tei in Japan Town-and the best dishes are the ceviche (made with kampachi, halibut, serrano chile, popped brown rice, coriander, cucumber, and lemon), the yukari-cured halibut, and the house-cured local sardines. For pairings, head straight to the sake list, which includes Kasumi Tsuri from Hyoga. Large parties and singles will enjoy the beautiful communal table in the center of the room.
