Celebrity chef Michael Mina doesn’t just have one restaurant in Vegas, he has three. The James Beard Award-winner earned his fame for his Michael Mina restaurant in San Francisco, and brought two more to the MGM Grand. Seablue is the newest of the jewels and inspires diners with Mediterranean dishes and shellfish selections that rotate daily. The fish is flown in from all over the world. Guests are encouraged to eat family-style, and the small plates are arranged in five categories based on preparation: raw, marinated, steamed, batter-fried and crusted. The tables for two can get crowded with all these little dishes, so request a larger booth if possible. The atmosphere is lively (the music can get downright loud), and the interior design modern. Come for fun, but not a quiet conversation (though the dining room on the right is a bit less noisy).
