Tapas Molecular
Blue Hawaii (Not Your Father’s Snowcone) may be an unusual name for a dish on a menu. But there is little that is ordinary about dining at the Tapas Molecular Bar in the Mandarin Oriental.
A dazzling culinary exploration of the boundaries of conventional restaurants, the experience of dining at the 38th floor restaurant is more performance than subsistence. With a maximum of 14 people seated around a square counter during each of the two nightly sittings, chefs produce as many as 30 bite-sized creations that are as imaginative as they are unexpected, and fortunately very tasty too.
The fantasy element is boosted by the fact that the meal is accessorized with glass plates, steel menus, oversized plastic syringes, metal straws. A tip: don’t be surprised if you find yourself breathing dragon-like fumes from your nose, sipping an invisible drink, or if your tastebuds are magically altered at some point during the meal.
