Istanbul’s doyen of fine-dining, Tugra, is the city’s top table by some distance. It’s prim and elegant, too: ties are considered a show of class, trying to pour your own wine most certainly isn’t. Cuisine under the tutelage of head chef Uur Alparslan is classic Ottoman with many of the sumptuous, unctuous and fruity delicacies drawn from centuries-old palace cookbooks. The full-fat option at Tugra is the multi-course tasting menu, best washed down with reds from Cappadocia and Bozcaada although several vintages of Chateau Lafite lie in state by the salumeria (yep, pork is served) and cheese counter. Main dishes arrive under a salver shaped like a Sultan’s hat – a jolly novelty that offsets the strict formality somewhat. As you might expect from the showpiece restaurant at Istanbul’s finest hotel – the Çiragan Palace – the views over the Bosphorus are priceless
